CHEESE PLATTERS

Cheese platters are so simple and fun to assemble. I typically look for one hard, aged cheese, a soft spreadable cheese and a blue cheese. 
If I want to make a larger platter, I'll add a sheep or goat's milk cheese and a cheese rolled in or made with fruit or herbs. The key is variety. Then add crackers, grapes or some fresh herbs to top.
